So upon the idea of old man H a recipe thread. I reckon these can be full blown recipes or just hints and tips? Happy to start. The best mash potato, get a couple of big Maris pipers, prick them and microwave or as per nigella mee crow wavvay until they are cooked through approx 6 minutes, then pop them in the oven for approx 10 mins at 180’. Let go like baked spuds with a crisp skin this massively improves the flavour. After removing them cut into 1/4s pulling the skin back as close as possible to the spud and leaving as little as possible potato on the skin Get a potato ricer and squeeze the spuds through add a good 1/4 block 75g of butter and some milk, sea salt a good amount and black pepper. Then mash it all together for soft fluffy mash.

I have a couple of good ones. Fried eggs in bread. Cut holes in bread, plonk bread in a frying pan with oil. Cook for a minute or so then flip it over. Crack eggs and pour them into the holes in the bread. Cook and consume. Delish.

Instead of mayo or ketchup in your burger, try it with crunchy peanut butter - it needs tomato and lettuce for a bit if moisture; absolutely delicious with either a beef burger or a chicken burger / chicken breast etc

Best baked potato.
Clean, prick and "bake" Maris pipers in't microwave until fully cooked. slice in half then quarters. Remove most of the flesh from the skins and mash it with BUTTER!! Take the skins with about an eighth of an inch of flesh still on and deep fry them. I always use a "chipper" potato for this recipe, try it next time you do a Sunday roast, makes a change from roast spuds.

Roast potatoes Maris piper spuds cut into small chunks 1/4 small spuds 1/8th bigger ones. Drop into heavily salted boiling water. Get a baking tray and add oil/fat beef or goose fat for special occasions otherwise just sunflower oil needs to be a good coating say 2 mm deep whack in the oven whilst spuds are boiling. After about 5 minutes boiling drain the water and give a minute or so rest. The most important bit, put the lid on the spud pan and shake. You don’t want to break the spuds but you’re aiming at roughing up the outer part. Once done remove the baking tray place the spuds in the crackling oil. Get a tea spoon and baste the spuds in oil then season heavily with sea salt and cracked black pepper. Put back into the oven for 15 minutes then remove move the spuds so they present a different side re baste and put back in the oven repeat this every 10 minutes. They will go Uber crispy almost like glass on the outside and really fluffy inside. Perfect roast spud.

Elvis burgers. No idea why the are called this lol.
Fresh steak mince, diced onion, mixed herbs, sea salt and black pepper. Mix it all together and make two patties. Chop up some cheese (whatever you prefer) and place a hefty whack onto one patty and then stick the other one on top. Make sure they seal together so the cheese can't escape. Fry gently until slightly browned. Delicious.

Hardly used the oven since buying one , faster cooking, cheaper to run as your not heating up a bigger oven area, food comes out so much better, crispier chips etc.
Have the ninja two draw version, can cook separately and sinc the times , so start one earlier, then the second draw kicks in and they finish at the same time , or match the times so both together .
Thought nothing of them till the wife ordered one, now a big fan.

Got just about every kitchen gadget going from a sous vide to a kitchen aid mixer through to an ice cream maker, do I need another gadget? I’ve looked at them so you’d recommend a 2 drawer ninja?

I have a single draw Ninja. They are the business. Agree with every comment from rigga above. The 2 draw would have been better, but I bought a mid sized one to save space. Don’t regret it, but would definitely go for the 2 draw if you have room. Frozen chips and fish fingers are so much better. Jon

There are loads of different versions about , Ninja seem to be the favourite, or better marketing or whatever, it's like vacuum cleaners all get labeled Hoover's.
Two draw is better, as obviously you can cook two separate portions of a meal, but some of the larger single draw versions have enough space to cover that , just differing cooking times are easier with a double.
Wife did BBQ pulled chicken last night with peri peri wedges .... Marvelous.
Recommended kitchen item.

This book has some great recipes. I don't think we've bought one of those jar curry sauces since. There is no comparison. They're not actually all curries. There are lots of other things in it as well like Naans and salads. I've done the three curries below a few times. Some of the ingredients you'll struggle to find in Asda but we have a Chinese supermarket in town that sell all of it.
