28MM PWKs are very popular on here. I have a set on my 31K and they are easy to jet, plus give a load more midrange.
Lots of jetting info in here, search for PWK.

Yes, or fit to the inlets so you dont disturb the oil pipes when removing carbs

I bought my Pwk's from Dave Whattam - Muttsnuts on this forum. I also bought the billet inlet from him and he drilled and fitted the oil inlets for me. Once I finished building the bike, Dave put it on his dyno and sorted the jetting for me. The carbs come with generic jets that were too rich to start off with, and Dave got it spot on with very little work. Dusty

Carbs are not "sided", they are 2 single carbs, so both have a choke and are not physically linked to each other.

Worth noting the Kawasaki Kr1 also uses Pwk carbs as standard fitment, and some guys use those; 20190926_114759 by dusty miller, on Flickr Dusty

Remote, cable operated choke on one carb. Lever mounted at the handlebars.

Mine starts fine just reaching under the tank and pulling the left choke up. Cable operated as above is more refined If you are running the airbox and have a relatively stock motor, there are some good starting points for jetting in here.

On "Betty", you really needed the remote choke cable. There was no way to reach the carb due to the frame spar being so wide; DSCN2639 by dusty miller, on Flickr

today I went to Polini motori, I work 100 meters from them. These are their Polini branded PWK 28s. It costs €95 each. Do I have to change the intake manifold as well?

They work fine with the stock intake. You just have to stretch the airbox rubbers around and bolt them on tight with good jubliee clips.
You can soften the rubber up with hot water and/or use a beer bottle to stretch them a little.
You can also use the stock throttle cable, with a 45 degree bend. Again, lots on this forum about that. Search for "PWK Elbows"
