Ok just pulled the carbs off my 350LC notice they are 31k YPVS carbs. From what I’ve read these are a common upgrade from the standard carbs. I have a couple of carb rebuild kits to fit but was purchased for 350LC carbs. Is this going to be a problem. The kits have 22.5 pilot jets which I believe are better when 27 are fitted. Oh and just to make it more fun it’s a 250 with 350 barrels but can’t see what difference this would make.

Hope that's not Keyster kits you have bought 😬
You only really need the fuel valve repair kits. Norbo does them for £12 each
Everything else should be fine with a clean

Yep Keyster kits. Is there a problem with these? What the fuel valve? Fuel tap ?

Some people swear by Keyster
When it comes to Lc's I've only heard them cursed. Many times over the years there will be a thread from someone who has a brand new rebuild running poorly and swear it's not carbs as they have new internals
The brass jets don't wear out. Carb cleaner and some thin wire and they are fine
The fuel valve is the little rubber tipped plunger that the floats open and closed. The seat is the brass bit it locates in.
There is a rubber o ring sealing the seat to the carb body that can perish
Ideally you need to drill the brass balls out to to check the air correction circuit is clear
Emulsion tube (nozzle) needs removing and cleaning too
Search brass balls for guidance

I bought Keyster kits a long time ago for a set of 31k carbs before I knew any better. Fitted them to and had trouble. While I think the fuel valves looked reasonable quality, I suspect they are not the right dimensions in terms of height. When the floats were set to 21mm fuel poured out the carbs. You could get them to seal at a different float height, but I didn’t like that idea.
By the way I ended up with 27.5 slow running jets on 31k carbs (fitted to a 250 bottom end with 350 top end for what it’s worth as you say) to get it to run smoothly at bottom end.

I’ve 31K carbs on my 350, standard porting but running large can all speeds, ended up with a 25 pilot in mine to cure a stutter at 5000-5500 rpm, there all a bit different don’t think one size fits all so to speak

Which leads me to my next question. What are the float height settings for the 31k carbs?

Keyster carb kit's are a defo no
i wouldn't go past Norbo's kits and accessories for carb builds , get something wrong here and it opens all sorts of bother , do it properly the first time and have no doubt
