What is the setting of the OEM thermostat? I've read somewere 71 deg C
Do you mean calibrating my Motometer temp gauge? I can only check it with a calibrated temp sensor. There is unfortunately nothing to adjust

Yes standard is 71 degrees quick won't help when you are trying to achieve lower
There is a 50 degree Yam stat. Got the part number if you need it

There is unfortunately nothing to adjust Sorry if a was confusing before. Take your temp sensor out of your head. Leave it connected to the loom with extention wires to the loom. Take a pan of water and warm it up to 65C. Then stick the sensor in the water and read your dial. That is what your aiming for. Your 71C stat will stay closed and that results in a minimum of flow and a big delta T over your rad. My advice is take the temp stat out and your temp will be far lower than 65C in this season. In this season your new rad is probably over designed and you need a temp stat to keep it at least above 50C. With your smaller old rad you could achieve 50C by just taken out the temp stat. With you new big rad you need a stat of at least 50C to reach that in autumn. Hope this makes sence😉🧐

The Motometer temp gauge has no electrical connections. It has a gas filled tube running from the sensor to the gauge. Real racer stuff as you do not need a battery or alternator. Same philosophy as the internal battery driven Scitsu tacho.
I replaced this Scitsu for an external battery powered one but kept the Motometer as it is such a cool device. Unfortunately it over-reads. Maybe I can reposition the pointer.

It is a cool device and fits perfect with the rest of the bike. If I could not recalibrate it I would map it at for example 50, 60, 70 and possibly 80 degree water temperature compared to what it actually reads.
You will know if your safe or not then just by reading the gauge.
