Have you any method of measuring the actual water temp? I'd be surprised if 5 mins of ticking over got the water that hot, even if the thermostat was stuck, or the pump wasn't pumping. Take the rad cap off (when cold) and run it. Do you see any water movement? should start to move more after thermostat opens.
I realise this isn't easy, due to crappy placement of rad cap, on F2 anyway. Much easier on a LC.
I have one of those cheapo infrared temp gun things, dead handy for things like this.

stuck thermostat or an air lock, take the small pipe off the head (middle rear of head) and make sure coolant comes out, if it does, then run it run and squeeze the water pipes and recheck your water levels, if you have an air lock this will cause your symptoms, as will a stuck thermostat

Take the rad cap off when cold and start the bike
You should see water coming out where the spigot of the bypass hose
This will prove no air lock and also the water is circulating so the impeller hasn't broken off the shaft

If you aren't riding the bike, the temperature will eventually go up as there's no fan therefore no air going through the rad
