basicially i am on what is marked on my current piston's are 1.25...question is can i re-bore safely to whatever the next size up is...and what is the next size?

Yes you can go all the way up to 2.5mm oversize on a 250LC. Next size up is 1.5mm but I would send the barrels off to someone like PJME and they will check and supply pistons to suit.
