Bikes been standing for years with unused gear oil in at the right amount but the clutch was stuck and it either doesn't want to change gears or its jumping out of gear could it be as simple as renewal of oil?

If the clutch is free then i think your looking at worn selectors / selector drum / damaged gears , motor out and split the cases to have a look, have you drained the oil when hot and seen any metal in the oil?

generally a pretty simple job to whip the clutch cover off and strip it down for a look at the clutch.
