I have just removed the engine from my project bike, would it be ok to cover the up any openings to the internals and put it in a parts washer and give it a brush over?

Should be fine if you can be sure the cleaning fluid doesn't get where it doesn't belong.

Should be fine if you can be sure the cleaning fluid doesn't get where it doesn't belong. Will block the exhaust ports, reed blocks and top hose, spark plugs are in so should be ok.

I wouldn't. Strip it and do it properly and you can check all the internals and replace anything that needs it

I've done this before. No problem. Just use a brush and some engine cleaner. Don't jet wash!

I got 5 litres of general purpose degreaser from screwfix and used it with a small brush and bucket of water to give mine a general once over to get rid of the worst of the crud before I got into it and did a proper clean on individual parts once stripped.
As said, seal up all the holes and don’t jet wash
