I,m building a mongrel LC at the moment. It has standard LC forks and I`ve bought some YSS progressive springs. I`ve always just used engine oil but thought I,ll try the proper stuff this time. What is the best fork oil and what weight should I get?

I use Motul fork oil which I think is either 10 or 15 weight. I have stock springs with spring spacers and that works for me. The front end is quite stiff but compliant.

Engine oil has a standard measurement system so all the engine oils will have the same viscosity for a particular grade.
When it comes to fork oil grades there are no set standards.
Two different makes of fork oil that say 15W can have different viscosity.
You will need to Google a fork oil viscosity chart. This will compare and measure all the different makes of oil at 40 degrees Celsius and 100 degrees Celsius.
My personal opinion is to use an fork oil with a viscosity between 36 cSt and 46 cSt measured at 40 degrees Celsius.(this is all noted on the charts)
The fork oil question will throw up lots of different opinions. I would suggest you listen to them all take in what is important for you and experiment until your happy with the results. If not happy don't be afraid to ask specific questions as there are lots of clever people on this forum who can help you.
I am also running Maxima 15W fork oil, I'm a bit on the podger side of things.
