Can it be done? I ask as I have a set and am pretty close now to firing up my 250LC lump. Only other carbs I have are some Gamma ones that amazingly bolt right on but are totally dismantled and I have no clue at all as how to rebuild them!

Alex, at the most basic level a carb is a carb is a carb....mix some air with a spot of fuel and it might just be combustible mixture!
The vm 28 for the Air-cooled is a good alternative to the VM26 if you don’t happen to have a set lying about. As with any setup, for optimised running the jetting would need tweaking but if your question is about just firing up the engine for a static test....then set of Aircooled carbs will be fine. maybe use the Air-cooled reed block rubbers without the balance pipe as that would take you even closer to where you need to be.
As for your gamma carbs.....there’s no secret voodoo course you need to pass in order to put them together... If it helps...try forget they are an ‘ objet mystérieux’, you are fine with model making so why not treat them as that. Get the exploded parts drawing for the carb, identify all the bits directly or by exclusion and put them together!

Absolutely agree with Peter, you can make almost any carb work, I would either blank the balance pipe off or use aircooled manifolds (or same as I done with my LC) whatever you have, you may find it hard to jet using the balance pipe.
