I’ve fitted a Zeeltronic to the LC, will the 31k curve be safe enough to use to run it in, or should I back it off a bit? Also fitted a ypvs stator.

You could just put in an LC curve :-)
19 degrees pretty flat and tailing off at higher revs.

31K is safe and a good choice. LC didn't have a curve.
