You mention the pipes and jetting which is a possibility
The overheating at idle is normal
As there is no fan they will go into the red if standing still.
As for the only riding it gently I would try the opposite
My hybrid will sit around 75 degrees (digital guage) cruising on the motorway but if you then thrash it the temperature starts dropping
It has been dyno'd and is slightly rich up top
If it is running lean at small throttle openings it could make it hot
If you take it out and are cruising along and the temp starts rising drop a gear and pin it wide to see what happens
If it cools down try dropping the Needle clip position and see if it helps

No signs of any coolant leaks anywhere and not losing any coolant either - it is bone dry and sparkling clean. I think the advice re. the measurement system is homing in on the root cause (I hope)!

If this was a car, I would be saying check head gasket and check for any hairline cracks in head and cylinders, though as has been said you would expect pressurisation in the system, your above answer answers my other question I was going to ask.
I would buy 1 of those cheap point and see thermometers.

Hi I have a 31k, temp was 1/4 when moving at speed limit 1/2 to 3/4 when in traffic the expansion tank would blow cap off when pushing hard, checked thermostat, was ok, check rad cap was opening a bit early so replaced it, thought that was it, but no luck so i took head off put a straight edge on it head was warped and had a nasty gouge, so I got flat surface some medium emery paper moved the head on the paper not other way round, I wasn't sure if it would work so I got another head in case, but it's fine now, temp needle only just at bottom of the green, and goes 1/4 when in traffic.

I have appreciated all the advice on this topic - the bike now seems to run much cooler with the new rad/stat etc. The gauge seems a bit iffy (i.e. it bounces around a bit) so have a new set of gauge "innards" on route to me, everything else checked wiring/sender etc.
The cooling system seems fine but there's evidence the bike runs much cooler with large throttle openings (not engine speed) - just playing about with it i can see if it is getting a little hot i can cool it down by changing UP a gear and giving it full throttle and guess this is richer on the main jet - does this indicate too lean on the pilot air screw etc?
Not an expert and been away from these bikes for years so the learning curve is steep....
