Good choice on doing the calipers now IMO.
Sure as suggested you take take things off and clean them up perfect at a later date, but draining brake fluid and then having to re-bleed on re-assembly makes it worth doing now.
Have you used a torque wrench on the caliper bolt halves. I only ask as I’d strongly advise checking it periodically when using stainless cap heads. Were they A4 or A2 stainless? The ductility of stainless is less than steel. A4 is near normal 8.8 bolts, while A2 lower. I’m sure the originals are high strength 10.9. What that means in layman’s terms is they are more likely to stretch and make the caliper halves loosen. I’m sure you can guess the rest.
I’m quite interested myself as I’m using A4 in mine, but will be keeping a close eye as to whether to replace them with original or titanium.

Looking good, really like the 3-spoke wheels. Was planning having a go at zinc plating. Did you eventually get success with it?
