if your gonna pull the head off...the bikes one that is...you can have a go at checking its flat by lobbing it on a FLAT surface like a sheet of glass or summit...

if you find its a bit wonky, you can tape a sheet of fine emery paper on the sheet of glass and give it a little 'home-skim'...just do it enough to get a nice dull finish all over the head...dont go mad with some rough stuff...make sure you wash it thoroughly after though...

as for what,if anything,to put on the gaskets at rebuild time...i think its a matter of personnal taste...i sometimes use a thin smear of grease to make it easier to get the old gaskets off,but if summit leaks persistently,i go with a bit of hylomar...blue or red,i cant remember which... ...norbos thinking of the cooling system i reckon...could be wise advice ...beats taking it off again...just dont go too mad with sealent coz it can sqeeze out when you torque down...gets in places it aint sposed to...

If you want to make sure your head and barrels are flat use a mirror and grinding paste compound as used for seating valves, u can get it from any car parts shop. put paste on the mirror then rub the cyl head in a circular pattern. When you lift the head you will see if you have a level head by the pattern in the paste. in my opinon you should only grease your new gaskets before fitting then they will come off easy when it comes to stripping the engine down, and in most cases the gaskets can be re used ;D
